PREPARATION
1. Cook the Falafel:
- Heat 2 tablespoons of olive oil in a pan over medium heat.
- Fry The Meat Club falafel until golden brown.
- Alternatively, for a healthier option, you can bake or air fry the falafel. Follow the package instructions.
- Place cooked falafel on a paper towel to absorb excess oil.
2. Warm the Pita Pockets:
- Warm the pita pockets in an oven, toaster, or on a stovetop griddle until soft and pliable.
3. Assemble the Falafel Pita Pockets:
- Carefully open each pita pocket to form a pocket for filling.
- Spread approximately 1-2 tablespoons of hummus on the inside of each pita pocket.
4. Add the Falafel and Toppings:
- Place The Meat Club falafel balls into each pita pocket.
- Add sliced cucumber (about 1/2 cup), tomatoes (about 1 cup), shredded lettuce (about 1 cup), red onion (about 1/2 cup), and feta cheese (if using) to taste.
5. Drizzle with Sauce and Garnish:
- Drizzle approximately 2 tablespoons of tzatziki sauce over the falafel and toppings.
- Sprinkle fresh chopped parsley on top for added flavor.
6. Serve:
- Serve the falafel-filled pita pockets immediately, securing them with toothpicks if necessary.
