PREPARATION
- Add sliced onion to a pan with EVOO, garlic and chilli and sauté until onion is almost soft.
- Add beef strips and spices and cook until beef strips are cooked through – don’t over cook them!
- Remove corn kernels from the cob and sauté with diced onion, paprika and garlic in a separate pan until corn is golden.
- Remove from heat and stir through the goats cheese, salt, pepper and lime juice.
- Mix together diced tomato, rice, black beans, lime zest and coriander.
- Serve everything in separate bowls for people to make their own burritos, just like you would tacos.
