PREPARATION
- Scoop out ripe avocados into a bowl and mash them until mostly smooth.
- Add lemon juice, chopped red onion, coriander, and salt to the mashed avocado. Stir to combine. Cover and refrigerate to chill.
- In a separate bowl, mix the ground beef with taco seasoning until fully incorporated.
- Divide the seasoned beef into 4 equal portions and gently roll each into a loose ball.
- Heat a griddle or non-stick skillet over medium heat. Lightly oil the surface to prevent sticking.
- Place a beef ball in the pan and immediately smash it flat using a spatula or heavy pan (with parchment paper). Flatten to roughly tortilla size. Cook for 2–3 minutes.
- Flip the beef patty, top with shredded cheese, and cook for another 1–2 minutes until the cheese melts.
- Place a tortilla on top of the cheesy beef, press gently, and let it warm for 30 seconds. Flip the entire taco to crisp the tortilla for another 30 seconds, then remove from pan.
- Repeat for all tacos. Serve 2 per person with optional toppings like sour cream, mayo, or jalapeños. Add a generous scoop of guacamole and lime wedges on the side.the
