PREPARATION
- Preheat & Season: Preheat your oven to 200°C. Season the steaks with salt and pepper.
- Roast Vegetables: Toss zucchini, capsicum, and sweet potato with olive oil, salt, and pepper. Roast for 25 minutes.
- Sear the Steak: Heat a cast-iron pan over medium-high heat. Sear steaks for 3 minutes per side.
- Butter Baste: Lower heat, add butter, garlic, and thyme. Baste the steak for another 2 minutes.
- Rest & Serve: Rest the steak for 5 minutes before slicing. Serve with roasted vegetables.
