Frequently asked questions
The drumette is the upper section of the wing, nearest the body, shaped like a small drumstick with a single bone. It carries more meat than the midwing or the tip. The Meat Club sells Lilydale free-range drumettes in 400g packs, FREPA accredited, raised without antibiotics, Halal certified and blast frozen in Australia.
Give them at least 2 hours, and overnight in the refrigerator is better, since the skin slows how quickly flavour penetrates. Then air-fry at 180°C for 18 to 20 minutes, bake at 200°C for 25 minutes, or grill over direct medium-high heat for 15 to 18 minutes while turning regularly.
Pat the drumettes completely dry after marinating, since surface moisture is what stops skin from crisping. Air-fry at 180°C for 18 to 20 minutes, or bake at 200°C for 25 minutes, without crowding the tray so steam can escape. Turn once halfway through for even browning on all sides.
Each 100g carries around 16.1g of protein and 17.4g of fat, with 917kJ of energy and 56mg of sodium, pending supplier testing. Drumettes are a richer wing cut with more of their weight in skin and bone relative to a fillet. A 400g pack typically holds 10 to 14 pieces depending on size.
Yes, Lilydale free-range birds are raised without antibiotics. The exception is veterinary treatment: any bird given antibiotics is removed from the free-range line. Drumettes also carry no added hormones and come from FREPA accredited farms where birds range outdoors from about 21 days. Each 400g pack is Halal certified and blast frozen in Australia.
