PREPARATION
- Boil 1 litre of salted water, cook the quinoa until tender, then drain and let it cool.
- While the quinoa cools, prep the chicken, herbs, and spices.
- Mix everything together in a large bowl, including the cooled quinoa.
- Preheat the oven to 180°C, roll the mixture into 20 meatballs, and bake for 15 to 18 minutes until cooked through.
