But the choice between wild-caught and ocean-raised salmon is more nuanced than most articles suggest. The label matters less than the source, the species, and how the fish was raised.

Here's what you actually need to know.

Wild-Caught Salmon: What It Means

Wild-caught salmon live and feed freely in rivers and oceans. They eat a natural diet of smaller fish, krill and crustaceans, which gives them their deep colour and firm texture. Because they are constantly swimming, their flesh tends to be leaner, with a more pronounced salmon flavour.

Wild-caught salmon is generally considered sustainable when it is harvested responsibly. The caveat is that sustainability varies by fishery, species and region, and overfishing remains a real concern in some parts of the world.

Ocean-Raised Salmon: What It Actually Means

Raised salmon is often discussed as a single category, but conditions vary widely from producer to producer. The gap between low-density, clean-water ocean pens and high-density industrial aquaculture is large, in taste, in nutrition and in environmental impact.

At one end, some large-scale Atlantic salmon operations use high stocking densities, routine antibiotics, artificial colouring agents and closed-pen systems that can affect the surrounding water. That is what most generic criticism of raised salmon refers to.

At the other end are producers like Akaroa Salmon in New Zealand, which is a different proposition entirely.

The Species Distinction: King Salmon vs Atlantic Salmon

Most raised salmon globally is Atlantic salmon. King Salmon, also known as Chinook, is a different species and the largest of the Pacific salmon. It has naturally higher fat content, deeper orange flesh and a richer flavour than Atlantic salmon.

When you read generic comparisons between wild and raised salmon, they are almost always about Atlantic salmon. King Salmon sits in a different class.

The idea that raised salmon is low in omega-3 applies to some operations, not to King Salmon raised in clean, low-density ocean conditions.

Responsible wild-catch fishing, with proper management and traceability, is a sustainable choice. The risks are overfishing and ecosystem disruption when management falls short. Traceability varies by fishery.

Akaroa Salmon state that their pens are stocked at low density and that no antibiotics, hormones, pesticides, GMOs or antifouling chemicals are used.
