PREPARATION
- Preheat oven to 180°C fan-forced and line a muffin tray with reusable cups.
- In a bowl, mix dry ingredients with a wooden spoon.
- In another bowl, whisk wet ingredients, then pour into dry ingredients and mix.
- Spoon batter into muffin cups and top with one crushed Chief Choc Mint Collagen Bar.
- Bake for 20-25 minutes or until a skewer comes out clean. Let rest before removing.
- While cooling, mix icing ingredients (except the remaining Choc Mint Collagen Bar) until smooth.
- Once cooled, remove the muffins from the cups.
- Store in the fridge for up to 5 days or freeze in airtight containers.
